Steam rushing past a small opening pulls the milk in by suction and mixes it with air through a fine inlet, and a valve or a small pump on some makes switches between hot milk and foam. After each drink, a rinse or a cleaning cycle blows water and steam back through the path. A manual espresso machine does the same job with a steam wand the owner holds in a pitcher. Almost every milk problem starts with milk itself: a film that dries in the tube, the frother's tiny air inlet or the wand tip, and turns into a hard white skin that no rinse can move. Froth goes thin, milk spits, or none is drawn. Worn O-rings in the frother let air in where it should not, and a leaking milk valve drips between drinks. Where the cleaning cycle stopped working, the steam valve or its passage is often scaled.
